Oysters with Soy, Chilli and Mirin Dressing
“We served ours on a bed of rock salt but you could also use crushed ice”

INGREDIENTS

Serves 2

  • A dozen fresh oysters
  • 1 tablespoon of Mirin (Japanese rice wine)
  • 1 teaspoon of soy sauce
  • 1 teaspoon of sesame oil
  • 1 small chilli, seeds removed, finely diced
  • Pinch of sea salt and pinch of black pepper
  • 1 spring onion, finely sliced on a diagonal
  • A few coriander leaves, picked, chopped

METHOD

Place the Mirin, soy, sesame oil, chilli, coriander, salt and pepper in a small bowl and stir to combine.

Place your oysters on a serving platter then coat each oyster with a little of the sauce and garnish with a few slices of the spring onion.
